pipe a good amount of whipped cream onto the base of the swan, you can sweeten it or add liqueur if you wish. Place the wings onto the cream and finally the head and neck , dust with icing sugar. Place on a lake of chocolate sauce and garnish. There you have a swan on Derwentwater or should that be a Swan on dirty water !!
